Delicious Hedgehog Cookies Recipe

These adorable hedgehog cookies are not only pleasing to the eye but also tasty to eat. With a crunchy exterior and a soft, sweet interior, these cookies are perfect for any occasion. Kids and adults alike will love them!

Ingredients

• 1 cup unsalted butter, softened
• 1 cup granulated sugar
• 1 large egg
• 1 teaspoon vanilla extract
• 2 1/2 cups all-purpose flour
• 1/2 teaspoon baking powder
• 1/2 teaspoon salt
• 1/4 cup cocoa powder
• Mini chocolate chips
• Sliced almonds

Directions

1. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
2. Add the egg and vanilla extract, and mix until well combined.
3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
4. Divide the dough in half. Mix cocoa powder into one half of the dough until well combined.
5. Wrap both halves of the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.
6. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
7. Roll out the plain dough on a lightly floured surface to about 1/4 inch thick. Use a cookie cutter to cut out circles for the hedgehog bodies.
8. Roll out the cocoa dough and use a smaller cookie cutter to cut out circles for the hedgehog heads.
9. Attach the heads to the bodies, pressing gently to adhere.
10. Place mini chocolate chips on the bodies for eyes and a sliced almond for the nose.
11. Bake the cookies for 10-12 minutes, or until lightly golden brown.
12. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
