Ingredients
- 6 ears of fresh corn, husked and cleaned
- 1 cup heavy cream
- ¼ cup unsalted butter
- 1 tablespoon sugar
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon all-purpose flour
- 1 tablespoon water
- 2 tablespoons chopped fresh parsley, for garnish
Directions
- Cut the corn kernels from the cobs and set aside.
- In the Instant Pot, select the Saute function and melt the butter.
- Add the corn kernels, sugar, salt, and black pepper to the pot. Saute for 5 minutes, stirring occasionally.
- In a small bowl, whisk together the flour and water to make a slurry.
- Pour the slurry into the Instant Pot and mix well with the corn.
- Pour in the heavy cream and stir to combine.
- Cancel the Saute function and close the Instant Pot lid.
- Set the pressure release valve to Sealing.
- Select the Pressure Cook function and set the time to 3 minutes on high pressure.
- After the cooking time is complete, do a quick pressure release by carefully turning the pressure release valve to Venting.
- Once the pressure is released, open the lid and give the creamed corn a stir.
- Transfer the creamed corn to a serving dish and garnish with fresh parsley.
