Ingredients

  • 6 ears of fresh corn, husked and cleaned
  • 1 cup heavy cream
  • ¼ cup unsalted butter
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon all-purpose flour
  • 1 tablespoon water
  • 2 tablespoons chopped fresh parsley, for garnish

Directions

  1. Cut the corn kernels from the cobs and set aside.
  2. In the Instant Pot, select the Saute function and melt the butter.
  3. Add the corn kernels, sugar, salt, and black pepper to the pot. Saute for 5 minutes, stirring occasionally.
  4. In a small bowl, whisk together the flour and water to make a slurry.
  5. Pour the slurry into the Instant Pot and mix well with the corn.
  6. Pour in the heavy cream and stir to combine.
  7. Cancel the Saute function and close the Instant Pot lid.
  8. Set the pressure release valve to Sealing.
  9. Select the Pressure Cook function and set the time to 3 minutes on high pressure.
  10. After the cooking time is complete, do a quick pressure release by carefully turning the pressure release valve to Venting.
  11. Once the pressure is released, open the lid and give the creamed corn a stir.
  12. Transfer the creamed corn to a serving dish and garnish with fresh parsley.
  13. Serve hot and enjoy!
