Ingredients
- 2 pounds potatoes, cubed
- 1/3 cup onion, diced
- 1/3 cup bell pepper, diced
- 1/4 cup celery, diced
- 1/2 cup mayonnaise
- 1/4 cup plain Greek yogurt
- 2 tablespoons white vinegar
- 1 teaspoon sugar
- 1/2 teaspoon garlic powder
- 1/2 teaspoon mustard powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
Directions
- Bring a large pot of salted water to a boil. Add the potatoes and cook for 10-15 minutes, or until fork-tender.
- Drain the potatoes and let cool for a few minutes.
- In a large bowl, combine the onion, bell pepper, celery, mayonnaise, yogurt, vinegar, sugar, garlic powder, mustard powder, salt and pepper.
- Add the potatoes to the mixture and stir to combine.
- Garnish with the fresh parsley and serve.
